Oatmeal Cookies with dried Cranberries & White Chocolate Chips...












These Oatmeal Cookies bring me back to the days of the Girl Scout Cookie known as "Snaps"... Iced Oatmeal Cookies with Raisins.  They were a favorite of mine.  This rendition is sure to be just as good!

Recipe:
1 cup packed brown sugar
1 cup sugar
3/4 cup butter
1/4 cup margarine
2 eggs
3 tablespoons milk
2 teaspoons pure vanilla extract
2-1/2 cups rolled oats
2 cups all-purpose flour
1 teaspoon cinnamon/heaping
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1-1/2 cups dried cranberries
1-1/2 cups white chocolate chips

Method:
Beat sugars, butter, and margarine until creamy.  Add eggs, milk, and vanilla.  Mix well.  Combine oats, flour, cinnamon, baking powder, baking soda, and salt in a separate bowl.  Add to sugar and butter mixture.  Stir in dried cranberries and white chocolate chips.  Chill dough for 1 - 2 hours.  Preheat oven to 350 degrees F.  Drop by rounded teaspoons onto un-greased cookie sheet.  Bake 10-12 minutes.  Let stand for 5 minutes before removing from cookie sheet.

Yield: 
5 dozen
